You command your station with precision, maintain the integrity of our beverage program, and uphold the rituals that define the Tusk Bar and Brass as benchmarks of New York hospitality.
Your role blends mastery, presence, and pride — equal parts craftsman, host, and ambassador for the beverage identity of our venues.
Core Responsibilities:
Craft & Execution
- Prepare cocktails with impeccable technique, consistency, and attention to detail — honoring house recipes and maintaining exacting standards.
- Conduct daily taste tests of juices, syrups, and garnishes to ensure freshness and quality.
- Maintain deep knowledge of classic cocktails, house cocktails, spirits, seasonal offerings, and bar philosophy.
- Prepare citrus, garnishes, syrups, and juices to the required specifications — seedless, clean cuts, proper peel coins, and labeled daily for freshness.
Station Ownership & Readiness
- Fully set, organized, and ready for service before pre-shift begins — no personal items at the bar.
- Own the opening and closing of your bar station, ensuring all tools, batching, syrups, ice, and supplies are prepared, replenished, and stored properly.
- Execute all opening duties: bottles, ice, spears, garnish prep, batching, and station setup based on the nightly pull list.
- Execute closing duties: cleaning and drying all tools, replenishing batches and syrups, organizing the station, and completing the nightly pull list with accurate totals and notes.
Professional Conduct & Standards
- Absolutely no drinking alcohol behind the bar during service.
- Cell phone usage behind the bar is strictly prohibited.
- Maintain uniform standards: clean, pressed, complete uniforms every shift.
- Liquor rooms are storage spaces only — never personal locker areas.
Service, Hospitality & Guest Engagement
- Engage guests with warmth, intention, and elegance — guiding them through cocktails, spirits, and pairings with confidence.
- Uphold the standard of bartending as both craft and theatre — balancing speed, grace, and storytelling.
- Start bar tabs correctly at Tusk: by taking or pre-authorizing a guest’s card at the beginning of service.
Collaboration & Flow
- Work in concert with Bar Manager, Barbacks, Captains, Sommeliers, and Back-of-House teams to ensure perfect pacing, timing, and execution.
- Maintain constant communication to ensure all dining room beverages are prepared with accuracy and urgency.
- Support barbacks, and rely on them for ice, glassware, syrups, juices, and storage — while leading by example through organization and professionalism.
Hygiene & Quality Control
- Clean tools immediately after use to uphold hygiene, readiness, and efficiency.
- Store all garnishes and ingredients in dated, labeled containers — wedges discarded nightly, dry garnishes used only where specified.
- Follow strict daily standards for juice-making, syrup-making, garnish prep, and mise en place.
Ideal Candidates

You should:
- Have 3–5 years of experience in high-end cocktail bars, luxury hotels, fine dining, or Michelin-rated environments
- Demonstrate exceptional bar technique, spirits knowledge, and classic cocktail fundamentals
- Thrive in structured, disciplined environments where standards matter
- Understand that bartending is choreography — a balance of timing, intuition, and energy
- Display unwavering professionalism: punctuality, poise, cleanliness, and focus
- Communicate with clarity, confidence, and emotional intelligence under pressure
